PEA & GOAT'S CHEESE RISOTTO

with red quinoa, spinach & wild rocket

Risotto is a labour of love, but this creamy red quinoa (with half the guilt) is worth it. Red quinoa as the risotto provides a lovely textured and healthy base. Throw in exotic mushrooms, goat's cheese and spinach, and you have a winner!
